
For the past few days I needed chocolate in a bad way. Someone told me once that the craving for chocolate during one’s time of the month was all in a woman’s head, and maybe it is, but you know what? I’m okay with that.
Now, how to indulge my sweet tooth without refined sugar? After some searching around I came across a recipe called German-Chocolate Fudge Bites. It is without refined sugars or oil. It is also vegan, gluten-free and raw if such things matter to you (they do not to me.) I tweaked and doubled the recipe, here is my modified version.
PMS Bites!
- 1 1/2 cups dates
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 1/4 cup cocoa powder
- 1/4 cup unsweetened shredded coconut
- 2 tbsp ground flaxseed
- 1/2 cup raw pecans
Do you want to know the funny thing? I have a rather strong aversion to pecans, and am not generally not a fan of shredded coconut either. Loved both in this though.
- Check your dates to see if they have been pitted. I buy mine in the produce section at the store so I always need to pit them. Don’t been intimidated, they are soft, you can do it with your fingers quickly and easily. I store any extra dates in a ziplock bag in the produce drawer in the fridge.
- Pulse the pecans in the food processor to chop them up a bit, then add the other ingredients. After a minute or so everything will start to stick together in a big ball.
Eat whole ball.Shape the ball into a log (it will be a bit sticky,) wrap in plastic wrap and store in the fridge. Slice off pieces as desired. You could also cut into 20 or so pieces, roll them into balls, dust them with cocoa powder and make them look all pretty and presentable.
But really who really needs presentable when all you want to do is crawl under some blankets with all the seasons of Mythbusters and moaning occasionally which watching all the episodes in which they blow up things?
